Peach Galette (GF)

It’s peach season. It’s summer time. It’s fill your days with warm galettes topped with vanilla ice cream.

A few things come to mind as I share this recipe with you guys.

First, this gluten free galette does not follow your typical pie crust method of water and butter. In fact, every time I tried to make a galette or a pie with a gluten free pie crust recipe, the results were never impressive. It was always too dry.

Secondly, all purpose gluten free flours are not all equal when it comes to gluten free baking. Never, ever. As much as we want to find that one amazing gluten free flour that will make all our baking consistently delicious and mind blowing, I will tell you right now, it does not exist. I have been on this gluten free road for over 10 years and have tried soooooo many variations of just about any dessert. I learned the hard, expensive way what works and what doesn’t.

When I was on the hunt to create the perfect gluten free galette, it was a lot of trial and error.

Then one day I was making gluten free rugalech with King Arthur’s flour and as I was rolling out the dough, it dawned on me how this would also make a really good pie crust. The rugalech turned out kind of dry but I decided I needed to try another flour and see how it goes.

Namaste Gluten Free Flour stood up to the challenge. This brand consistently renders a crust that isn’t overly flaky or dry. It’s the one I use again and again to make rugalech and all of my galettes.

Who knew that butter, cream cheese, and a pinch of salt could create the dreamiest texture and the right amount of flake. And it holds up to just about any filling.
