Wild Rice Lentil Mexican Soup (GF)

So here’s a little fact about our family. We have Soup Mondays. In other words, I make a big pot of soup for dinner every Monday night because it’s what we crave after a busy weekend of eating out.

And a hot bowl of nourishing, brothy soup always feels like such a good reset for the new week ahead. Plus it’s so good for the digestive system.

This recipe idea was birthed when I had just spent a day at the beach with my close friend Mindy and we walked back into her place relaxed, hearts filled and tummies grumbling. She served me a delicious bowl of chicken and rice soup. But it wasn't just any soup. It was called Mexican Chicken soup. It was simple with just a handful of ingredients but the flavor rocked my world. I went home inspired to create my own version.

Say hello to Wild Rice Lentil Mexican Soup.

It does take some time to make it because I simmer a whole chicken with bone for 2 hours to create the lightest, most tastiest chicken bullion. It literally feels like healing oil is being poured all over you when you eat it. Yes, I’m serious!

This soup has that perfect, variant texture from tender chunks of chicken, wild rice and lentils. It also has a nice little kick from the jalapenos and cumin. And adding some zest from a splash of fresh lemon juice and chopped cilantro ties in all the flavors.

A bowl of goodness that truly comforts and nourishes.

I have cooked it so many times for my family, our church small group and I have even cooked it for 60 people for a church event. Everyone loves it and I know you will too!
