Feta Corn Salad

I have been on a major corn kick lately. I usually don’t eat it since I have digestive issues and corn is not easy to digest. But this summer I have been cooking corn at least twice a month.

It’s so juicy and buttery when it’s not overcooked. And many people overcook it.

This salad came to me on a whim. I was craving corn! This meant I needed to make something with corn.

Say hello to the Feta Corn Salad.

You guys, it’s so good. Like I cannot express it enough just how good it is.

It’s got that mild kick from the jalapenos, that fresh zest from the lemon and cilantro, that slight salty creaminess from the feta, and then that fruity yet bitter flavor from a very generous drizzle of extra virgin olive oil, all tossed with warm chunks of juicy, buttery corn.

Be still my heart. Can this get any better?
