Sweet Potato & Cranberry Hash

Ooooooh I love this one. Thanksgiving inspired me to create this recipe a few years ago and it has remained a crowd favorite.

This side dish is perfect for any holiday brunch and dinner.

Actually, it is a goodie any time of the year. It’s gorgeous on a large white platter and pairs so beautifully with eggs, spring mix salads, breakfast sausages, ham or poultry.

And the best part is that it’s so simple to prepare.

Roasted sweet potatoes tossed with sauteed red onion, dried cranberries and pecans. Freshly chopped parsley ties all the flavors in.

Trust me when I say this combination is sooooooo good!!!
