The Best GF Banana Bread

Thee gluten free banana bread. Theeeeee only one you should be making if you’re gluten free. It will not disappoint you. Not in any shape or form because that’s how perfect this recipe is.

But you must follow the recipe to the T.

Use the flour I’m advising you to use. Use the thawed frozen bananas.

Absolutely no ifs or buts when it comes to these two tips! You will end up baking a banana bread loaf that is not only moist but has the perfect texture and that right amount of crumb and a rich banana flavor. I have made this loaf so often that the recipe is tried and true and turns out amazing every single time.

And I will continue being a broken record until I’m blue in the face about how you cannot use one brand of gluten free flour for all your baking needs. It doesn’t work. It doesn’t exist. Each one is good at a few things but not everything because each one is formulated differently.

With banana bread, I always add mini chocolate chips and chopped walnuts but this is entirely optional. If it was up to my kids, they would never put nuts in anything.

I have also made it a habit to buy bananas every time I go grocery shopping. Whether the family will eat them or not (they typically do eat a few), I have the bananas sit in the fruit bowl until they are very spotty. After that I put them in the fridge until the peel turns brown. Then I throw them in the freezer with the peel still on. Every time we’re in the mood for banana bread, I know I’ve got enough frozen bananas to bake a loaf.

This is a tip that I learned 12 years ago (and will never forsake) from a sweet elderly lady at church. She would bake loaves upon loaves of banana bread. Every slice that was sold was money donated back to the church. Everyone always asked her “how do you get that rich banana flavor?” and her answer was

“freeze the brown bananas with the peel on, no other way around it.”
