If you are here reading this, then you probably know what khachapuri is and are looking for a gluten free version.
If you don’t know what it is and stumbled here out of curiosity, allow me to make you very hungry.
This is a traditional Georgian dish that consists of warm, soft dough filled with a mixture of crumbled feta and mozzarella. It’s typically shaped into a boat and has a perfectly runny egg. It’s life in every bite and I haven’t been able to enjoy one in a long time until now.
If you are gluten free and been longing for khachapuri, you have come to the right place.
This gluten free version is gold. GOLD! And I’m not just saying that! So many gluten free recipes out there in general hype things up but in reality taste mediocre and we settle for it. We think “this is the best we are ever going to get.”

I make these into mini size without the egg and garnish with freshly chopped parsley. We enjoy it with soup and there are never any leftovers. I should probably learn to make a double batch.
